Lamb Chops with Sweet pepper Pesto

Ingredients


8 lamb chops
2 sweet red peppers
1/2 cup basil leaves
3 tbsp.olive oil
2 tbsp.grated parmesan cheese
2 cloves garlic
4 ears fresh corn
salt
1 pkg. mixed salad

Instructions


Place peppers and corn,(husked on),on greased grill for a bout 20 minutes.Let cool to handle.Cut corn into rounds.Wrap in foil.Put peppers in food processor.Add Basil,oil and cheese and puree until blended.Stir in garlic,stir in garlic,salt and pepper to taste.Place lamb chops and foiled corn on greased grill over medium high-heat,grill for 5-7 minutes per side for medium rare meat.Served with red pepper pesto,corn rounds and mixed salads!!
